Its a formal cantonese term, but thats how its done.

The wing chun family I am in has roots in Hong Kong where cantonese is the primary dialect, and my sifu is a direct student of a hong kong master.

The formalities are carried over.. its a sign of respect also..

Interesting. My master is called sifu too. I means 'Father' while the founder of that special style is called 'Si-gung' i.e. Grandfather. The other instructors are called 'si-hing', elder brother. Did you ever hear about Wun Hop Kuen Do?
